Main Ingredients
- 1 Tbsp. - dark brown sugar
- 1 Tbsp. - fresh lemon juice
- 2 tsp. - vanilla extract
- ½ tsp. or ¼ tsp. - Diamond Crystal or Morton kosher salt
- 5 - medium ripe bananas (peeled)
- 1 3.4-oz. box - instant vanilla pudding
- 2 cups - whole milk
- 1 8-oz. package - cream cheese (room temperature)
- 1 7-oz. package - Marie biscuits
- for serving - whipped cream
- Eight - glass jars with lids (6-oz. or larger)
- Step 1 In a medium bowl, stir together dark brown sugar, fresh lemon juice, vanilla extract, and kosher salt until the sugar and salt are dissolved.
- Step 2 Slice the bananas lengthwise into quarters, then cut into ¼-inch pieces. Add the banana chunks to the bowl and gently toss to make sure they're completely coated. Set aside.
- Step 3 In a mixing bowl, beat the instant vanilla pudding mix and whole milk on medium speed for about 3 minutes until well combined. Gradually add the room-temperature cream cheese, about 2 oz. at a time, and mix until smooth, about 4 minutes.
- Step 4 Transfer the pudding mixture to a large piping bag or a resealable plastic bag with a corner snipped off.
- Step 5 Arrange the glass jars on the counter. Spoon 1 Tbsp. of the banana mixture into each jar. Pipe a thin layer of pudding on top, followed by a whole Marie biscuit (break if necessary to fit).
- Step 6 Continue layering with banana mixture, pudding, and biscuits until the jars are full, ending with a layer of pudding. Crush any remaining biscuits for topping and set them aside.
- Step 7 Cover the jars with lids and refrigerate for at least 2 hours to set.
- Step 8 When it's time to serve, uncover the jars, top with whipped cream and a sprinkle of the reserved crushed biscuits. Enjoy!
